Start by preparing your guacamole. Place the avocado in a large mixing bowl (or blender if you prefer a finer consistency)
Add finely chopped onion and tomato, squeeze over half a lime and season well.
Give it a good mash up and set aside until ready to serve.
For the pico de gallo, once all the ingredients are chopped, simply combine them all together and set aside until ready to serve
Now onto the burger. In a small bowl mix together your spice mix.
Drizzle over a little olive oil onto your burger and then rub in the spice mix. Discard any remaining mix.
Add a tad of oil to a hot frying pan and cook the burger until golden.
