- 1 plant-based burger patty
- ½ tsp cumin
- ½ tsp paprika
- ½ onion powder
- ¼ red onion thinly slice
- salt and pepper to taste
- 1/2 tbsp olive oil
- handful of green oak lettuce
- handful of alfafa and onion sprouts
- 1 burger bun
For the Guacamole:
- 1/2 avocado Make sure the avo is ripe enough!
- ½ red onion
- 1 tomato
- handful coriander
- juice of half a lime
- salt and pepper to taste
For the Pico de gallo:
- 1 ripe tomato finely chopped
- 1/4 red onion peeled and finely chopped
- 1/2 cup fresh parsley finely chopped
- 1/2 red chilli finely chopped remove the seeds if you don't like it hot
- salt & pepper to taste

Method
- Start by preparing your guacamole. Place the avocado in a large mixing bowl (or blender if you prefer a finer consistency)
- Add finely chopped onion and tomato, squeeze over half a lime and season well.
- Give it a good mash up and set aside until ready to serve.
- For the pico de gallo, once all the ingredients are chopped, simply combine them all together and set aside until ready to serve
- Now onto the burger. In a small bowl mix together your spice mix.
- Drizzle over a little olive oil onto your burger and then rub in the spice mix. Discard any remaining mix.
- Add a tad of oil to a hot frying pan and cook the burger until golden.
To serve
- Serve on burger bun of choice, layer the lettuce, burger, onion slices and the alfalfa sprouts and spread on a thick layer of guacamole. Add your top bun and dig in!
