Let’s face it, there is not much better than hummus! In order to keep our taste buds guessing and on their toes, I like to play around with hummus variations and using beetroot just so happens to be one of them.
- 2 medium Roasted Beetroot, skin removed
- 1 can Chickpeas
- 1/2 Lemon (juice)
- 3 Garlic Cloves
- 1 tbsp Tahini
- 1 tbsp Coconut Yogurt
- Pink Salt & Pepper (to taste)
- Combine all ingredients into a Kitchen Aid or other food processor and blend until desired consistency is reached. At halfway point, stop and scrape the ingredients down from the side of the work bowl and then continue.
